We are so happy to share our favorite holiday recipes with you all… some of which are guaranteed to get you into the Christmas spirit!

Amanda’s Festive Christmas Margarita Recipe

  • 3oz cranberry juice (or Red Bull Winter Edition Pomegranate)
  • 1oz lime juice
  • 1oz triple sec
  • 2oz tequila

Garnish lime wedge, orange slice, cranberries and if you have it a sprig of rosemary

Rebekah’s Sweet Potato Souffle

  • 2 Cans of Yams (I use Bruce’s Yams 40oz size cans)
  • 3 large eggs beaten
  • 1 stick of salted butter melted
  • ½ cup of sugar
  • ½ cup of brown sugar
  • 1 ½ cup of milk
  • 1/3 tsp of nutmeg
  • ¾ tsp of cinnamon

Preheat oven to 325o.

I use a 13 x 9 baking dish for this souffle

Drain Yams and smash with fork or masher. Combine all ingredients with an electric mixer. Pour into the baking dish. Bake 35 to 45 min at 325o or until firm.

Add topping and bake for an additional 15 minutes. I sometimes add topping at the start of baking. It really is your choice. Just make sure the souffle is not soupy, but firm at the end of baking time, if you put the topping on at the beginning of baking. Allow extra baking time if needed.

  • Topping
  • ¾ stick of salted butter melted
  • ¾ cup of brown sugar
  • ¾ cups of pecan pieces (I use pecan halves, put them in a baggie, and crush with a coffee cup!)
  • 1 cup of crushed cornflakes (same instructions as pecans!)
  • Miniature marshmallows

Add pecan pieces and crushed cornflakes to melted butter and brown sugar and combine them together. Sprinkle over souffle mixture. When baking is done, sprinkle marshmallows over the entire top of the souffle and broil until a lovely brown. Keep an eye on it, they brown quickly!

Toni’s Praline Nibbles Recipe

  • 1 ½ stick of butter
  • ¾ cup brown sugar
  • 2 cups Rice Chex Cereal
  • 2 cups Corn Chex Cereal
  • 2 cups Wheat Chex Cereal
  • 1 ½ cups Pecans

In a large bowl add all of your cereal and pecans and mix well.

In a small pan, melt butter and then add brown sugar and bring to a boil.  Boil for 2 minutes longer, stirring constantly, until all of the sugar is dissolved.

Pour brown sugar mixture over the cereal mix and stir until all pieces are evenly coated;

Bake at 325o degrees for 12-15 minutes, stirring once halfway through

Monica’s Christmas Eve Mice

No baking, easy to do with kids and so adorable!

  • 24 double-stuffed Oreo cookies
  • 1 cup semisweet chocolate chips
  • 2 teaspoons shortening
  • 24 red maraschino cherries with stems, well drained
  • 24 milk chocolate kisses
  • 48 sliced almonds
  • 1 small tube green decorative icing gel
  • 1 small tube red decorative icing gel

Directions

  1.  Carefully twist cookies apart; set aside the halves with cream filling. Save plain halves for another use.
  2.  In a microwave, melt chocolate chips and shortening; stir until smooth. Holding each cherry by the stem, dip in melted chocolate, then press onto the bottom of a chocolate kiss. Place on the cream filling of cookie, with cherry stem extending beyond cookie edge.
  3.  For ears, place slivered almonds between the cherry and kiss. Refrigerate until set. With green gel, pipe holly leaves on the cream. With red gel, pipe holly berries between leaves. Store in an airtight container at room temperature.

Grandmother Dorothy’s Kris Kringle Cookies

I like to prepare and chill the dough overnight before rolling and cutting it out

  • 1 cup of margarine
  • 2 cups of sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 2 tbsp milk
  • 1 1/2 tps of soda
  • 5 cups of flour
  • 1 1/2 tsp cream of tartar

Directions

1. Cream margarine & sugar

2. Add eggs and vanilla, milk & soda then flour & cream of tartar

3. Roll & cut

4. Bake at 450o for 7 min.

Grandmother Genevieve’s Apple Cake

  • 1 ½ cup Wesson Oil
  • 2 Cups Sugar
  • 3 Beaten Eggs
  • 1 tsp Vanilla
  • 1 tsp Soda
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 3 Cups Flour

Directions

  1. Mix oil and sugar, add vanilla and the rest of the ingredients slowly. 
  2. Stir well and add 3 cups of fresh diced apples, and 1 cup of pecans (optional).  The mixture will be very thick and makes a large cake.

There is no need to spray your pan, this has enough in it that it does not stick.

Bake @ 350o for 1 Hour

Wilhelm Family Christmas Morning Breakfast Recipe

Breakfast Casserole:

  • Bread Crumbs
  • 1 1/2 Pounds of Sausage-browned
  • 1 Can Cream of Mushroom Soup
  • 1/2 Can Milk (use the cream of mushroom soup can)
  • 1 Dozen Eggs
  • 1 3/4 Cup Milk
  • 1 Teaspoon Salt
  • 1 Teaspoon Pepper
  • 1 Teaspoon Dry Mustard
  • 8 Cups Shredded Cheddar Cheese

Directions

  1. Place bread crumbs in the bottom of the pan.

2. Place sausage on bread crumbs

3. Mix cream of mushroom soup with milk pour over sausage.

4. Place cheese on top

5. Mix eggs, salt, pepper, milk, and dry mustard.

6. Refrigerate overnight.

7. Top with cheese before baking and bake at 300o for 1 to 1 1/2 hour/s.

Hot Spiced Fruit:

  • 2 Bananas sliced
  • 1 Can (29 oz) Peach Halves Drained
  • 1 Can (16 oz) Pear Halves Drained (Save the juice)
  • 1 Can (20 oz) Pineapple Chunks Drained
  • 2 Cans (11oz) each Mandarin Oranges Drained
  • 1/2 cup of Butter Melted
  • 1/2 Cup Packed Brown Sugar
  • 1 Tablespoon Cornstarch
  • 3/4 Teaspoon Cinnamon
  • 1/2 Cup Juice from Pears

Directions

  1. Mix drained fruit well and place in a 9×13 baking dish.
  2. In a saucepan, combine the remaining ingredients and cook on medium heat.
  3. Cook stirring until slightly thickened (5-6 minutes).
  4. Pour over fruit.
  5. Bake uncovered at 350o for 15 minutes or until hot.

Makes 12 servings.

Stacy’s Holiday Sangria

Refreshing and guaranteed to get you into the Christmas Spirit!

Ingredients

  •  2 750ml bottles Pinot Grigio (or Sauvignon Blanc if you prefer a less sweet taste)
  •  3/4 cup sparkling apple cider
  •  1/4 cup sugar (I love sugar in the raw brand)
  •  1/4 cup cranberries, halved
  •  3/4 cup cranberries, whole
  •  1 apple, chopped
  •  3 rosemary sprigs
  • Garnish: rosemary sprigs

Directions

  1. Combine all ingredients in a large pitcher.

2. Stir together with a large wooden spoon to help the sugar dissolve.

3. Refrigerate for at least 4 hours before serving.

Add ice to your glass and pour in the chilled sangria. Top with a garnish of rosemary sprigs. Be sure to get some fruit in your glass!

___Aunt Faye’s Icebox Fruitcake____

(There are two parts to this recipe)

  • 1 quart of pecans
  • 1 lb cherries
  • 1 lb pineapple

Cut up all of the above & then sift two cups of plain flour & 1/2 teaspoon of salt. Pour this over the fruit well.

Beat together well:

  • 1 Cup of butter
  • 5 eggs
  • 1 2/3 cup sugar
  • 1 tsp vanilla flavoring

Pour this over fruit and mix well. Pour the batter into a pound cake pan and bake at 300 degrees for about one hour.
